On our land, ancient trees still bear their fruit naturally, without irrigation or chemical treatment.
We harvest each pod by hand and process it gently, preserving the pure character of the tree and the soil it comes from. Nothing industrial. Nothing rushed. Just honest carob, as it has always been.

Their roots grow deep into mineral-rich soil, drawing strength from winter rainfall and natural cycles. They do not need irrigation systems or artificial acceleration. What they produce is shaped by time, sun and resilience.
On our land, we follow that rhythm. We harvest when the pods are ready, not when a schedule demands it. We handle them carefully, respecting the character they developed on the tree.

Every pod is picked by hand at peak ripeness, directly from our trees in the Algarve.
After harvesting, the pods are gently washed and carefully selected to ensure only the best make it further. They are then lightly roasted at low temperatures between 80–85°C to enhance their natural sweetness without overpowering their character.
Once cooled, each batch is inspected again before being packed into 750g pouches. Pure, simple, and ready to enjoy.

Carefully harvested by hand and gently prepared on our Quinta in the Algarve, our whole carob pods remain true to their natural character.
Each batch is washed, hand-selected, and lightly roasted at low temperatures (80–85°C for 20 minutes) to enhance their natural sweetness, never overpowering it. After cooling, every pod is inspected once more before being packed into 750g pouches.
